CORRECT OPENING OF SPARKLING WINE
In the last few days, the advertising campaigns inviting people to consume more have reminded me of the approaching Christmas festive season when the consumption of sparkling wines is incredible. In my opinion, sparkling wines are not only for Yuletide and other celebrations and, if any reader wishes to go down well with family or friends, I would like to explain the correct protocol for opening a bottle of these wines.

 

Firstly, while the capsule (metal or plastic foil) is being removed and, in order to avoid the cork popping out and the wine spilling, we hold the thumb on the cork.

     
 

We hold the cork with the left hand and turn the bottle with the right. On opening these wines we should turn the bottle, not twist the cork. Turning the bottle and holding the cork we control the pressure, thus avoiding sudden openings, breaking the cork and noise.

     
 

I will take the occasion to remind ourselves that, ON DECORKING, ALL KIND OF NOISE SHOULD BE AVOIDED.

     
 
The serving glass should be the fluted type. To serve, we take the bottle in one hand, introducing the thumb into the depression at the bottom of the bottle and using the other fingers as a tray-like for the bottle, which we should tilt in order to serve in the glass.
 
     
  Once the wine is served, we should keep it in an ice bucket with abundant ice and water to maintain the temperature at between 6 and 8 degrees.
     
 

Finally, I would like to pay a small tribute to logic by reminding you that the custom of placing a spoon in the mouth of an unfinished bottle of sparkling wine has no sense at all.
